Potato growing test box was opened today. The pictures literally speak for themselves. Clearly there is no advantage in carrying out excessive hilling when growing potatoes. The purpose of hlling is to insure the tubers are covered. For comparison one Pontiac Red was dug in the same row, which was almost identical to the test box potato in appearance.

Red Pontiac is a mid season variety. Until otherwise presented with reasonable proof, I assume the thrust of the main post is applicable to all potatoes. Hilling or covering is strictly to insure no light strikes the new tubers causing them to turn green, and producing solanine, which is harmful if ingested.

Red Pontiac, also known as Dakota Chief, is a red-skinned early main crop potato variety.
